ABOUT KIMURA'S KITCHEN

 

Kimura's Kitchen is a Japanese cooking school based in Zealand, Denmark. I founded the school in 2015 with the aim of showing home cooks how to make delicious Japanese food with minimum equipment, time, and space. 

The school has evolved over time, from humble beginnings of me taking ingredients and equipment on the back of my bicycle around Copenhagen for home cooking classes, then renting a space for evening classes in the Meat Packing district, to doing events and street food festivals, and now offering live video classes using technology to reach people all over the world. Alongside my ever popular home cooking classes. ​

I believe that people learn best when they are relaxed and enjoying themselves, and what better way than to be than in your own home while learning from a skilled chef.

Kimura's Kitchen is run by myself, Joe Kimura Downie, with occasional help from volunteers and like-minded Japanese enthusiasts.

I've always loved good food. At around 6 years old, I already knew what I wanted to do in life. I learned to cook in classic kitchens such as Gordon Ramsay's, but I fell in love with Japanese food after a visit to Osaka when I was 20 years old, and went to work for Nobu in London. I haven't looked back since, and have travelled to Japan almost every year, gaining certification and experience along the way.

Working in professional kitchens is fantastic as you learn so many things, and can never stop learning. But a lot of chefs over-complicate things, and don't really cook at home. I love cooking at home, and have always done so throughout my whole career, despite cooking all day at work as well. I just love the freedom and relaxed atmosphere, and there's nothing more satisfying than sharing good food with friends and family.

So that's why I decided to start this cooking school, to teach home cooks how to make amazing Japanese dishes in their own homes.
